Even though I live in Florida and fall weather doesn’t come till December, I have been craving a nice filling warm soup.
Get ready to loosen your belts because this soup is AMAZING!
What you need:
How it’s done:
In your crock pot add your peeled and cut up potatoes, along with your chicken stock (I added the whole thing) I added a handful of bacon bits (real bacon can be used as well) and then added diced onions (about a handful) cook in your crock pot on low for 6-8 hours or high 3-4.
Once the time is coming to an end, in a pan on the stove top add a stick of butter and melt. Once melted add flour until all the butter is soaked up. Lastly add your can of evaporated milk and stir on medium heat until nice and thick.
When that is done add it in to the crock pot and stir.
Next you will add 1/2 a cup of sour cream, 1/2 a cup of shredded cheese, then salt and pepper. These you can add more or less it’s completely what you prefer!
Stir together and mash you potatoes until it’s how you like it, cook about 10 mins and serve!
I topped mine with cheese and some bacon bits and it was perfect! So filling and perfect for football Sunday!
